Palak paneer is ultimate comfort food thats super easy to make. I like to make it when I have a bunch of spinach that is approaching the end of its lifetime, but its also a great thing to make for a crowd!
Ingredients:
- 1 tablespoon ghee or butter
- 1 block paneer (cubed)
- 2 large bags fresh spinach
- 1 large tomato (diced)
- 1/2 white onion (diced)
- 4 cloves garlic (diced)
- 3-4 thai chillies (diced)
- 1 tablespoon shredded ginger
- 1/4 cup heavy cream or coconut cream
- 1 1/2 teaspoons garam masala
- 1-2 teaspoons red chilli powder
- salt to taste
Directions:
- In a large, non stick pan, melt the ghee and let it heat up.
- Once hot, add the paneer cubes and cook until they are brown on all sides.
- Remove the paneer and keep aside.
- Add a little olive oil to the pan, and add in the onions, tomatoes, garlic, ginger, and thai chillies.
- Once the tomatoes have fallen apart and everything is starting to turn into a paste, add in the spinach and close the lid.
- After the spinach has wilted a little, add a little bit of water and mix everything until the spinach has all completely wilted.
- Take everything in the pot and carefully blend it into a smooth consistency.
- Add the mixture back into the pan and add some water if it is too thick.
- Cook the sauce on medium and add in the garam masala, salt, and chilli powder.
- Lastly, add in the paneer and cream.
- Serve hot with a side of garlic naan or paratas.
