Palak Paneer

Palak paneer is ultimate comfort food thats super easy to make. I like to make it when I have a bunch of spinach that is approaching the end of its lifetime, but its also a great thing to make for a crowd!

Ingredients:

  • 1 tablespoon ghee or butter
  • 1 block paneer (cubed)
  • 2 large bags fresh spinach
  • 1 large tomato (diced)
  • 1/2 white onion (diced)
  • 4 cloves garlic (diced)
  • 3-4 thai chillies (diced)
  • 1 tablespoon shredded ginger
  • 1/4 cup heavy cream or coconut cream
  • 1 1/2 teaspoons garam masala
  • 1-2 teaspoons red chilli powder
  • salt to taste

Directions:

  1. In a large, non stick pan, melt the ghee and let it heat up.
  2. Once hot, add the paneer cubes and cook until they are brown on all sides.
  3. Remove the paneer and keep aside.
  4. Add a little olive oil to the pan, and add in the onions, tomatoes, garlic, ginger, and thai chillies.
  5. Once the tomatoes have fallen apart and everything is starting to turn into a paste, add in the spinach and close the lid.
  6. After the spinach has wilted a little, add a little bit of water and mix everything until the spinach has all completely wilted.
  7. Take everything in the pot and carefully blend it into a smooth consistency.
  8. Add the mixture back into the pan and add some water if it is too thick.
  9. Cook the sauce on medium and add in the garam masala, salt, and chilli powder.
  10. Lastly, add in the paneer and cream.
  11. Serve hot with a side of garlic naan or paratas.
