Dabeli is an Indian street food, similar to a slider. What makes the filling super tasty is the spice blend in it- that you can either purchase or make yourself. I serve mine on Kings Hawaiian rolls because I LOVE them, but you can use regular rolls too.
Ingredients:
- Kings Hawaiian rolls (or any other roll)
- 3 russet potatoes (cubed and boiled until fork tender)
- 1 tablespoon Dabeli masala. You can buy it here, or use my recipe below:
- 3 tablespoons coriander seeds
- 1 tablespoon cumin seeds
- 2 teaspoons fennel seeds
- 1 tablespoon sesame seeds
- 1 teaspoon ground clove
- 1 teaspoon black pepper
- 1 teaspoon cinnamon
- 2 bay leaves
- 4 dried red chillies
- 1/4 cup dry coconut
- 2 teaspoons amchur powder
- 1 teaspoon ground ginger powder
- 2 tablespoon kashmiri red chili powder
- Toast all the whole spices in a dry pan on the stove, and then blend everything together in a spice grinder. You can keep the mixture in the freezer for up to a year.
- lemon juice (1/2 to a whole lemon)
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric
- 2 cloves garlic (minced)
- 2 thai chillies (minced)
- salt
- toppings:
- sev
- cilantro chutney (cilantro, lemon juice, cumin seeds, thai chili, garlic, salt- blended)
- tamarind chutney (tamarind paste, water, salt, chilli powder, dried pitted dates-blended)
- diced onions
- cilantro
- chopped peanuts
Directions:
- Start by heating up about 1 tablespoon of oil with the 1 teaspoon of cumin seeds.
- Once you can smell the cumin, add in the garlic and thai chillies.
- Once the garlic had softened, add in the boiled potatoes and turmeric. Let the potatoes heat through.
- Add the dabeli masala, lemon juice, salt, and a little bit of water.
- Mix everything as it heats up, and use the back of your spatula to break apart the potatoes.
- If the mixture is dry, continue to add a little bit of water. You want something a little drier than mashed potatoes.
- Taste for salt and seasoning, and adjust as needed.
- Serve on toasted rolls with your choice of toppings.
