This granola bar recipe is as easy as it gets. You can add whatever you want to them and even though they aren’t necessarily “good” for you, they aren’t bad either.
Yield- 24 bars
Ingredients:
- 5 cups quick cook oats
- 2 cups nuts (I used one cup of chopped cashews and one cup chopped almonds)
- 2 teaspoons sea salt
- 3/4 cup toasted coconut
- 1 cup pure maple syrup
- 2 heaping tablepoons cookie butter or peanut butter
- 2 teaspoons vanilla extract
- 1/2 semi sweet chocolate bar chopped
Directions:
- Start by lining 2 8×8 pans with parchment paper
- In a dry pan over medium heat, toast the oats and nuts until you can really smell them and the nuts start to brown slightly.
- Place the toasted oats, nuts, and most of the coconut into a large bowl. Leave some coconut for the topping.
- In the same pan over medium heat, mix together the maple syrup, vanilla, and cookie butter. Let the mixture start to bubble and continue to cook it until it turns a lighter caramel color. This should only take about a minute once it starts to bubble.
- Pour the warm syrup mixture into the bowl with the dry ingredients, and quickly mix to make sure everything is coated.
- Place half of the mixture into each 8×8 pan, and use the bottom of a glass covered in parchment paper to press the mixture down into an even layer.
- Sprinkle the top with sea salt, the remaining coconut, and the chocolate shavings.
- Let cool on the counter for 2 hours, and then cut into bars and store in an airtight container.
