BBQ Burgers

Veggie burgers at restaurants are always the same. A weird soy patty, some lettuce, tomato, and mayo. (disclaimer: impossible burgers and beyond meat are a super cool idea. I love that they give meat eaters a non meat option that is satisfying, but I think they are too much like meat and it grosses me out) This burger patty is for people like me that want something satisfying but also have no desire to have something that looks or tastes like meat. It is spicy and a little sweet, and topped with a tahini coleslaw and bbq sauce.

Ingredients:

For the patty-

  • 1 large sweet potato, cooked and mashed.
  • 1 can of black beans
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • lime juice from 1/2 lime
  • salt and pepper to taste
  • 1 poblano pepper
  • 1/2 large white onion
  • 3 cloves garlic
  • 1 egg
  • 1/2 cup- 1 cup breadcrumbs

For the cabbage slaw-

  • 1 pack of coleslaw mix (or you can shred your own cabbage and carrots)
  • 2 tablespoons tahini
  • 3 tablespoons water
  • Juice of 1 lime
  • Salt and pepper

Toppings-

  • BBQ sauce (I like to use a spicy garlic one)
  • Sliced jalepenos
  • Pepper jack cheese
  • Fried onions

Directions:

  1. Mash the sweet potato and black beans together until the big chunks of potato are gone.
  2. Saute the poblano, onion, and garlic together until the onions are softened. Add it to the potato bean mixture.
  3. Add in the seasonings, mix them in, and put the mixture in the fridge for at least 30 min.
  4. Right before you are ready to eat, take the mixture out of the fridge, add in one egg, and enough bread crumbs for you to be able to form patties.
  5. Cook the patties in a hot pan in about a tablespoon of vegetable oil. Cook on each side for about 4 min, and add slices of pepper jack cheese on top.
  6. Assemble the slaw by mixing all of the ingredients together in a bowl.
  7. Serve on a toasted bun of your choice!
