Stuffed Mushrooms

Stuffed mushrooms are the perfect appetizer for when you have people over. They look fancy, but aren’t at all and only take about 20 min to make. If you realize that you made a few too many, you can also freeze them prior to baking and just throw them in the oven whenever you have last minute company showing up!

Ingredients:

  • Large white mushrooms
  • Olive oil
  • Garlic powder
  • Crushed red pepper flakes
  • Ricotta cheese
  • Shredded mozzarella cheese
  • Fresh spinach (chopped)
  • Panko bread crumbs
  • Seasoned salt
  • Salt and black pepper

Directions:

  1. Wipe the mushrooms clean with a damp paper towel and remove the stems.
  2. Drizzle the mushrooms with some olive oil, salt, pepper, and garlic powder. Mix them around so they are evenly coated in all the seasoning.
  3. For the filling, mix together about 1 cup of ricotta, 1 teaspoon of red pepper flakes, a handful of chopped spinach, 1 teaspoon garlic powder, and salt and pepper to taste.
  4. Fill each mushroom cap with the ricotta mixture and top them with some shredded mozzarella.
  5. Top the mushrooms with panko bread crumbs and sprinkle with a little bit of seasoned salt.
  6. Bake at 400 degrees for 12-15 minutes- until the breadcrumbs have browned.
