I have never liked eggs. I am not sure if its the smell or the texture, but something about them is just very off putting to me. If you are looking for a good substitute for breakfast or just want to change things up, this scramble is perfect. I like to have mine on top of a toasted croissant with some store bought frozen hashbrowns and salsa.
Ingredients: (Yields 4-6 servings)
- 1 poblano pepper
- 1/2 yellow or white onion
- 1 block extra firm tofu
- 1/2 pack soyrizo
- 2 teaspoons garlic powder
- 1 teaspoon chili powder
- 1 teaspoon seasoned salt
Directions:
- Sauté your onions and poblano until the onions are softened
- Add in the soyrizo and continue to cook until it starts to brown
- Crumble in the tofu and add all the seasonings. Continue to cook until the mixture has browned and the tofu has dried out.
