Spicy Tofu Scramble

I have never liked eggs. I am not sure if its the smell or the texture, but something about them is just very off putting to me. If you are looking for a good substitute for breakfast or just want to change things up, this scramble is perfect. I like to have mine on top of a toasted croissant with some store bought frozen hashbrowns and salsa.

Ingredients: (Yields 4-6 servings)

  • 1 poblano pepper
  • 1/2 yellow or white onion
  • 1 block extra firm tofu
  • 1/2 pack soyrizo
  • 2 teaspoons garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon seasoned salt

Directions:

  1. Sauté your onions and poblano until the onions are softened
  2. Add in the soyrizo and continue to cook until it starts to brown
  3. Crumble in the tofu and add all the seasonings. Continue to cook until the mixture has browned and the tofu has dried out.
  4. Enjoy!
