I love pizza, and this recipe is perfect for when you want to change it up from the normal red tomato sauce routine. It has a thin crust, pesto cream sauce, caramelized onions, garlic mushrooms, and topped with an arugula salad. For a quick dinner, you can use store bought pizza crust and pesto to have everything ready in less than 30 min.
Ingredients: For one large pizza
- pizza dough (store bought or home made)
- pesto (store bought or you can use my recipe here)
- 1-2 cups of milk
- 4 tablespoons butter
- 2 tablespoons flour
- 2 large onions sliced
- 1 pack sliced mushrooms
- 5 cloves garlic
- cheese- I used a mixture of mozzarella and Monterey jack
- 3 cups arugula
- balsamic vinegar
- olive oil
- 2 teaspoons oregano
- 1 teaspoon crushed red pepper
- salt and pepper to taste
Directions:
- The key to the this recipe is to use the same pan for all the toppings to retain flavor. In a medium sized pan (make sure it is NOT non-stick), cook the onions in a little olive oil until the onions have softened.

2. At this point, season the onions with the oregano, crushed red pepper, and a pinch of salt. Continue to cook them until they are caramelized.

3. At this point, remove the onions from the pan, add a little olive oil, and add the sliced mushrooms. Once the mushrooms have started to brown on the edges, add garlic and salt and pepper.

4. Remove the mushrooms from the pan, and add the butter and flour. Whisk until the flour is well incorporated into the butter, and slowly add in the milk. Continue whisking.

5. Keep adding milk until the sauce is the consistency of a thin alfredo sauce. The sauce will pick up all of the flavor bits from the pan from the onions and mushrooms. Turn off the heat, and spoon in 3-4 tablespoons of pesto.

6. Preheat the oven to 375 degrees.
7. Roll out your pizza dough to a nice 1/4 inch thick size. I always make a big batch of pizza dough and save individual sized balls of it in the freezer. If you don’t have any on hand, any store bought pizza dough will turn out just as good.
8. Place the dough on a baking sheet and top it with your sauce, cheese, caramelized onions, and mushrooms.

9. Bake at 375 degrees for 30 min or until the crust has gotten crispy on the edges.

10. Lastly, top the pizza with some arugula. Drizzle the top with balsamic vinegar, olive oil, salt, and pepper.
