Pesto is, in my opinion, the most versitile of all sauces. It is also the easiest to make. I throw all the ingredients into a blender and thats it. This pesto tastes great on sandwiches, pizza, pasta..you name it! It’s also a great way to sneak some nutrients into picky eaters, just don’t let them see how you make it 😉
Ingredients:
- 2 large handfuls of spinach
- 1 handful of basil
- parmesan cheese (I use the vegetarian one)
- 1/4 cup toasted pine nuts
- 4 cloves garlic
- 1 teaspoon crushed red pepper flakes
- salt and pepper to taste
- olive oil
Directions:
Throw it all in a blender, add olive oil until the pesto is the consistency you like, and you’re done!
