Scones

There are a million flavors you can add to scones.  For sweet scones, I have a few of my favorite combos listed here.  The overall process is the same for each, the ingredients just differ a little.

Lemon Scones:

Ingredients:

  • 3 cups all purpose flour
  • 2/3 cups sugar
  • 5 tsp baking powder
  • 1/2 tsp salt
  • 2 sticks cold butter
  • 1 egg
  • 3/4 cup heavy cream
  • 1 tablespoon lemon zest
  • 1 tsp vanilla extract

Glaze:

  • 2 cups powdered sugar
  • lemon juice (1/2 lemon)
  • lemon zest

Vanilla Bean Scones:

Ingredients:

  • 3 cups all purpose flour
  • 2/3 cups sugar
  • 5 tsp baking powder
  • 1/2 tsp salt
  • 2 sticks cold butter
  • 1 egg
  • 3/4 cup heavy cream
  • 2 vanilla beans (use the little bits you scrape from the inside, not the whole bean)

Glaze:

  • 2 cups powdered sugar
  • 1 vanilla bean
  • 1 tablespoon heavy cream (add more if the glaze is still too thick)

Pumpkin Maple Scones:

Ingredients:

  • 1/3 cup brown sugar
  • 1 tsp baking powder
  • 2 cups all purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 stick cold butter
  • 1/2 cup canned pumpkin
  • 1 tablespoon maple syrup
  • 3 tablespoons heavy cream
  • 1 egg
  • 2 teaspoons vanilla

Glaze:

  • 2 cups powdered sugar
  • 1 tsp vanilla
  • 1 tablespoon maple syrup
  • Heavy cream (if you need to thin out the glaze)

Directions:

1. Preheat oven to 350 degrees (for vanilla or lemon), 400 degrees for pumpkin maple

2. Mix together dry ingredients

3. Cut in cold butter using pastry cutter or food processor until the mixture looks like coarse crumbs

4. Mix in wet ingredients

5. Roll out your dough (using flour if you need it) to 1/2 inch thick

6. Cut desired shape and bake for 18 minutes (until they are light brown).

7. Dip into glaze once they are completely cooled.
