Minestrone Soup

I made this soup in my crockpot, but it can be made on the stove the exact same way.  Just cook the veggies with the herbs in some olive oil before you add the beans and broth if you are using the stove.  For the crockpot, just throw everything in and leave it on low for 5 hours.  Add the pasta 20 minutes before you are ready to eat it 🙂

Ingredients:

  • 2 stalks celery
  • 1 white onion
  • 1 zucchini
  • 1 yellow squash
  • 2 carrots
  • 5 cloves of garlic
  • 1 can red kidney beans drained
  • 1 can white cannelini beans drained
  • 1 can diced tomatoes with the liquid
  • 1 teaspoon tomato paste
  • salt
  • pepper
  • tablespoon oregano
  • tablespoon basil
  • 1/2 tablespoon thyme
  • 2 bay leaves
  • 3 vegetable bullion cubes dissolved in
  • 5ish cups of water
  • 1/2 pound pasta
