Banana bread is one of those things you are tempted to make just because your entire house smells good after. In this recipe, I took my two favorite loaf cakes/breads (banana bread and coffee cake) and tried to make one that incorporated my favorite aspects of each. This cake is moist, tastes like some damn good banana bread, and has a crunchy crumbly topping.

Banana Loaf
- 2 Cups All Purpose Flour
- 1/2 Cup Granulated Sugar
- 1/2 Cup Brown Sugar
- 1/2 Cup Butter
- 1/2 Tsp Salt
- 1 Tsp Baking Powder
- 1 Tsp Cinnamon
- 1/2 Tsp Nutmeg
- 1/2 Tsp Baking Soda
- 1 Tsp Vanilla
- 1/2 Cup Milk
- 1 Egg
- 2 Ripe Bananas
- 1/2 Cup Chopped Walnuts
Crumb Topping
- 1/4 Cup Flour
- 3-4 Tablespoons Melted Butter
- 3 Tablespoons Powdered Sugar
Instructions:
Preheat your oven to 350 degrees. In a small bowl, combine all of your dry ingredients except for the sugars.

In a separate bowl, using a hand mixer or standing mixer, cream together the room temperature butter and the two sugars. Once combined, add in the egg, milk, and vanilla. With the mixer on, slowly add in all of your dry mixture until everything is combined. Finally, add in your two bananas (already mashed with a fork) and walnuts and stir them in. Add the mixture to a greased loaf pan and set on the side while you make your crumb topping.
For the crumb topping, combine the flour and sugar with a spoon. Mix in the melted butter slowly, until a crumbled dough forms like this:

Crumble this mixture over the batter in the loaf pan and put it in the oven. Set a timer for 30 min.

After 30 minutes, the cake won’t be fully cooked but the edges may start to look golden brown like this:

To keep the edges from burning, make yourself a little foil tent and stick it back in the oven for 15 min:
This way our crumbly topping in the middle will get nice and crunchy and the center of the cake will cook through.
Once the cake has had a total baking time of 45-50min, the cake should be done. Take it out and let it rest for 15 min.
Once cooled, I place my cake on a plate and drizzle a sugar glaze (1 tablespoon milk and 4 tablespoons powdered sugar) over the top. Because really….who doesn’t like a little extra glaze?
